Written down, so nobody has to ask twice.
These are real numbers for finished pieces in dry wood, delivered inside about an hour of the shop. Anything unusual I will quote before I start and I will not change it afterwards.

What moves the number
Length beyond six feet, because the wood gets rarer faster than it gets longer. Walnut over ash, always, by roughly double. A top that has to be square to a wall, because that means jointing an edge I would rather have left alone. And any piece where you want a specific slab out of the barn rather than the one that suits it.
What does not move it: butterfly keys, sanding grit, number of coats, or how long it takes me. Those are the job, not extras.
Deposit
Half at the order, half when it goes in the truck. If the wood does something unreasonable while I am working it, and occasionally it does, you get the deposit back and I keep the slab. That has happened twice in nine years and both times it was hedge.
Tell me the length you have room for. That is the only measurement I need to start.
